Evolve Wines produce some of our region’s finest wines with minimalist winemaking methods. They hand-select local fruit from Colorado’s best vineyards and make wine in small batches with minimal human intervention. Their unfiltered wines are natural, complex, tart, juicy, and elegant.

2016 Tempranillo

Pronounced “Temp-rah-nee-yo”.

“87 Points Wine Spectator”

Not your typical turbo charged fruit bomb. This wine has been aged for 26 months in old French oak barrels. It is full bodied with aromas and flavors of leather, plum and tobacco characters, like a classic old Spanish red wine. Drink now or cellar for more than 10 years. Limited quantities of only 170 cases were produced.

Best pairings are with braised, stewed or roasted meats, or game birds with a fruit sauce.

2017 SMV

Syrah, Mourvedre, Viognier

The SMV is a blend of 85% Syrah, 10% Mourvedre, 5% Viognier. The Syrah and Viognier were crushed and fermented (co-fermented) and aged together for 18 months in French oak barrels. The Mourvedre was aged for 17 months in French oak barrels. This wine has an explosion of aromas and flavors of white pepper, berry fruits, figs and hint of orange blossom. Drink now or cellar for 10 years. Limited quantity of only 170 cases were produced. 

Best pairings are grilled lamb, smoked pork shoulder or spicy grilled eggplant.

2017 Mourvedre

Pronounced “More-veh-drha”.

“90 Points Wine Spectator”

This wine has been aged for 17 months in French oak barrels. It is an elegant red wine with aromas and flavors of cherry, chocolate and hints of dried herbs. The balance is awesome with moderate tannin that integrate with the rest of the wines components. Drink now or cellar for 5 years. Extremely limited quantities of only 70 cases produced.

Best pairings are any hearty and meaty dishes especially grilled. Try a hearty soup or stew made with beef, pork, lamb or sausage.

BUCKEL FAMILY WINE

CINSAULT 2018

This lesser known red varietal is used for blending in Red Wine and Rosé in Southern France. This grape thrives in the Colorado climate, due to the intense summer heat and arid climate.  Our grapes are sourced from a small vineyard in Palisade, CO.  The Cinsault grapes were fermented in 1 ton open top fermenters.  We like a few days of cold maceration on the front end of the fermentation to gain as much color as possible.  Our Cinsault was aged for 13 months in French Oak Barrels.

This Cinsault is a light, bright red wine showing Strawberry, clove and spice.  A very unique wine that pairs with a wide variety of dishes and can even be served chilled in the summer.

CABERNET FRANC 2018

One of the five Bordeaux varietals that is usually used as a blending grape.  Our Cabernet Franc grapes are sourced from a vineyard planted in the 1970's.  These older vines' roots are well established in the bedrock and show the nuances of the terroir of the Grand Valley.  The grapes were fermented in 1 ton open top fermenters.  We allowed the native yeasts to start the fermentation.  Our Cabernet Franc was aged 15 months in French oak barrels.

A truly balanced wine with smooth velvety tannins with flavors of red currant, plum, and savory spices. With a nose of bell pepper, this is a classic Cabernet Franc.

CHARDONNAY 2017

The grapes are sourced from a collection of vineyards on the Western Slope of Colorado.  The grapes are hand picked and whole cluster pressed.  The initial fermentation happened in stainless steel and then was moved to barrel near the end of the primary fermentation.  Our Chardonnay was aged on the lees for 6 months and went through 100% Malolactic fermentation.

Citrus aromas, recollective of meyer lemons in summertime, with a delicate creaminess and a mineral lime finish.

STORM CELLAR

2018 Chardonnay

This Chardonnay is elegant, refined, and lighter in style than most domestic Chardonnays. It is balanced on the palate, with notes of apples, pears, and pineapple, supported with subtle aromas and flavors of caramel and butterscotch. This wine exhibits a honeyed texture and balanced acidity, pairing wonderfully with a wide range of foods, from crab and lobster, to grilled chicken and vegetables.

2019 Viognier

Fermented and aged in temperature-controlled stainless steel, medium in body, and extremely approachable, this Viognier is silky on the palate, with notes of stone fruit, lemon curd, melon, and spice. Dry on the finish, this Viognier is a perfect “cocktail wine” to simply sip on, yet it is also a great “food wine” that pairs well with a wide range of cuisines.

2019 Dry Riesling

Sourced from their estate vineyard in Hotchkiss, this dry expression of Riesling is the winery’s flagship wine. Sharp flavors of tart peach, lime zest, and white orchard flowers come through with a crisp, dry finish. Dry Riesling is the ultimate food-pairing wine. With bright acidity and a clean finish, this Riesling pairs beautifully with shellfish, charcuterie, vibrant salads, or roasted chicken, just to name a few.

2019 RRV

This is a Colorado twist on a classic Rhône-style blend. The leading grape, Roussanne, which comprises 50% of the blend, saw some time with French oak and provides the texture and spice within this white blend. The other two grapes are 35% Riesling and 15% Viognier, both of which bring balance to the richness of the Roussanne, while adding citrus and peach notes and bright acidity.
